6 AM
The coffee shop life means that we get up early to get things going. We need to be ready to go as people are heading off to work, as the old saying goes, the early bird gets the worm.
7:30 AM
First order of the day is serving locally sourced bagels and fair trade coffee to our customers. We open at 8am and have a pretty steady stream of customers getting their morning fix.
8:30 AM
We serve espresso drinks and getting them right is more difficult than you think. Things like the humidity of the air, size of the grind and length of exposure to water can change the flavor of espresso. The espresso needs to be "dialed in" on a regular basis to keep the flavors consistent throughout the day.
12 PM
Mid-day means lunchtime. We do serve breakfast all day, but heartier fare is added to the menu for lunch. Our prep area is small, but we serve a variety of sandwiches out of it and make it work.

Having a coffee shop means that it's a great place for community gatherings. This is a post retreat gathering by the production department of Center Stage. We welcome all kinds of groups into our space and consider this kind of engagement part of our mission.
